To shut down your stove is an controlled and safe manner, Bell advise that you close the air feed, which in turn will starve the fire of oxygen resulting in the extinguishing of the fire.

To allow a good flow of air to pass underneath the fuel bed, wood will generally burn better and slower on a bed of ash.
